So 7 years ago when I gave birth to my first daughter, Katelyn, I was thrilled. She was a great baby, ate her baby puree' perfectly and never complained about food. Then, a short two years later we discovered Katelyn didn't like meat. I mean she would eat corn dogs, chicken nuggets, and fish sticks, but any attempt for a night of easy Hamburger Helper was cause for a rather large tantrum.
Then there was Bryton a few years later and well, the kids eats nothing but cereal. (Unless he wants to, and then and only then an occasional pizza, nugget or hotdog.)
I, on the otherhand, have a natural aversion for vegetables. I HATE them. I can not even gag them down unless we are talking corn, carrots, potatoes or finely chooped onions. One of the things I hate about myself, I assure you. I WISH I loved veggies. Ok, I could do a salad daily, but that is about it.
My husband Chris is always greatful for a home cooked meal, but with so many variated tastes, how do you avoid cooking three meals, especially when you are a working mom!
Most nights include some sort of take out. I mean when Panda express opened a couple weeks ago, it was a highlight!!
Obviously this solution is neither healthy or affordable and so I come to you, my friends.
This is why I started this blog!
I know I am not alone in my quest to be a home cooker to my family. I know that there are other families out there like mine and I know you all have recipes to help keep me from eating macaroni with hotdogs on a nightly basis.
